Lemon is a staple in both the kitchen and the bar. While it plays a central role in food and drink service alike, the same problems come up time and again in everyday use: quality is inconsistent, portioning can go wrong in a rush, unnecessary waste is generated, and lemons run out just when they are needed most.

Our goal is to address these challenges in our customers’ daily operations, so we set out to find a better alternative. The result is cold-pressed pure lemon juice in a bag-in-box package: no concentrate, no additives, just lemon.

 

What makes the product different?

Our new product is pure juice with no additives and no concentrate. We launched a cold-pressed pure lemon juice that delivers only the fruit’s own fresh, natural flavor. The bag-in-box format offers three key benefits:

  • Precise portioning with no waste: exactly the right amount, neatly and quickly.
  • Consistent quality: the same taste and application from one serving to the next.
  • Practical shelf life: the product keeps at room temperature unopened and for 14 days in the fridge after opening.

The product means less hassle and waste, while streamlining service on both the kitchen and bar side.

 

Three ways to use the product: How to get the most out of NFC lemon juice

1. Fish and shellfish: quick marinades and finishing touches

Lemon works especially well with fish and shellfish, as it adds freshness and balances richness. Our new product is particularly well suited for high-volume buffet service.

Recipe idea: Lemon & Herb marinade

  • NFC Lemon juice
  • Olive oil 
  • Salt and pepper
  • Fresh herbs (e.g. dill or parsley) 
  • Garlic (optional)

Mix together, brush onto fish before pan-frying or roasting, and finish the dish with a small squeeze of lemon just before serving. With the bag-in-box, portioning is effortless, and the result stays consistent even during busy service.

Tip: Lemon juice also works well for deglazing quickly pan-fried shellfish. A splash of lemon in the pan, a brief simmer, and you have a quick and delicious sauce.

 

2. Drinks and mocktails: a reliable base, always the same flavor

In cocktails and mocktails, lemon is one of the most important acid components. When the acidity is consistent, so is the quality of the drink.

In a professional setting, the bag-in-box makes it easy to achieve fast portioning, reduced waste, and standardized recipes for a consistent end result.

Tip: If you have multiple drink recipes that call for lemon, this is an excellent way to standardize flavor and speed up workflow. For example, if you’re serving a drink that requires 4 cl of lemon juice, a single three-liter box provides enough lemon juice for approximately 75 drinks.

3. Salads and dressings: lemon vinaigrette and a fresh twist

Lemon isn't just a seasoning, it can form the backbone of a dressing. It works especially well when you want lightness and freshness without the sharpness of vinegar.
